Cranberry Oat Bars

Good evening!     Our fall weather that was so great has disappeared in a big swoop - we have freezing rain pellets  -  and snow  - and a vicious wind.     I managed to get my dog out for his morning walk just before the ice pellets started  -   and he sure isn’t asking for a walk tonight!         

Time for another tasty recipe  -   one comment was made about it  “dangerously delicious”          This recipe is for a 9 x 9 pan  but the ladies who commented on it had doubled the recipe for a 9 x 13 pan - and that is what I will use.     So here goes:  

Cranberry Oat Bars                                                                                                                          2 cups fresh or frozen cranberries   3/4 cup sugar      2 tablespoons orange zest                   1 1/2 cups all-purpose flour       1 1/2 cups rolled oats      1 cup packed light brown sugar   1 teaspoon baking powder     1/2 teaspoon salt        3/4 cup butter

DIRECTIONS (double ingredients for 9×13 pan)        In a small saucepan over medium high heat, combine the cranberries, white sugar and orange zest. Bring to a boil, then reduce heat and cook until the mixture has reduced to about 1 cup.

Preheat oven to 350 degrees F (175 degrees C). Grease a 9×9 inch baking pan, line with foil, then grease the foil.

In a medium bowl, stir together the flour, oats, brown sugar, baking powder and salt. Cut in the butter using your hands or a pastry blender until the mixture resembles coarse crumbs. Press half of this mixture firmly into the prepared pan. Spread the cranberry sauce evenly over the base, then crumble the remaining oat mixture over the top.

Bake for 10 to 15 minutes in the preheated oven, until the top is golden brown. Cool completely before cutting into bars.

This is going to be awfully sweet -  one lady sent a comment she had added 2 cups peeled chopped apples - cooked until tender and reduced,    1 /4 cup apple juice  and 1 tbsp cornstarch.      Expressed that it was delicious. 

Sounds really good to me -  and I’ll try out this recipe for my husband!    Now that the cool / cold weather has arrived I’ll get back in the baking mode again!
