Good evening! It has been a very busy day - we had our annual bazaar today at church - over there at 9am - six of us in the kitchen cutting buns, buttering, toppings on (5 different ones) then covering and storing them in the cars until required. We had all those beautiful cakes, cookies, etc. and of course our bake and craft tables. I was working in the kitchen - a beehive of activity! Really great - but tiring! I have to admit I had a little snooze when I came home after walking my dog!
Mom always told us that carrots would keep our eyes bright and healthy and if we didn’t we might go blind! I didn’t like them but her little threat worked - some.
A study published in the Archives of Ophalmology indicates that eating three or more servings of fruit per day may lower the rate of age-related macular degeneration (ARMD) A research involving food intake information of 110,000 men and women over a period of 12 - 18 years was carried out. The intake of vegetables was not strongly related to ARMD but fruit intake definitely showed as protective against this vision-destroying disease.
Three servings a day of fruit - you say? That sounds quite a bit! Ideas to have three servings are 1) have a dish of yogurt or a green salad with cranberries on top 2) toss a banana in your Smoothy drink in the morning 3) fruit over your cereal 4) bran muffins with cranberries baked inside! (I have made the recipe for bran muffins with mandarin oranges)
Just another reason to really enjoy the cranberries! However, I - and I’m sure I am not alone - do not want cranberries every day- plus the fact they are not always available!
