Classic Cranberry Nut Bread

Time again for a good Cranberry recipe  -  I went to Ocean Spray recipe box  -  for a 5 Star one!        I haven’t tried it  but it sounds really good!

Preheat oven to 350 F     and grease a 9 x 5″  loaf pan.    (I grease the bottom only and then the loaf rises higher)  

Mix together:    2 cups flour      1 cup sugar    1 1 /2 teaspoon baking powder  1 teaspoon salt      1 /2 teaspoon baking soda     in a medium size mixing bowl.  

Stir in:   3 /4 cup orange juice    1 tablespoon grated orange peel    2 tablespoons shortening          1 egg  -  well beaten     Mix until well blended then add:     1 1 /2 cups Oean Spray(R) Fresh or frozen cranberries, coarsely chopped      1 /2 cup chopped nuts  

Bake for 55 minutes or until toothpick inserted in centre comess out clean.   Cool on a rack for 15 minutes.   Remove from pan, cool completely.   Wrap and store overnight.   

Yield    1 loaf  (6 slices)     1 slice is 211 calories   fat calories 54;   protein  3 grams   carbohydrate 37 grams  fat 6 grams, cholestrol  18mg   sodium  313mg.  

I’ll be very honest -  I don’t use my oven very much in the summer time  -  I like to keep it cooler in the house   and use the air conditioner very seldom.     However,  time is coming when I’ll be back into the baking mode  -  and the cookie jar, the cake box, etc. will be filled  -  and that makes my husband very happy!!

Cranberries for our Heart!

Good morning!    August 27th  -  August is winding down and soon we will be experiencing that cooler fall weather  -  however, for now, we are being promised more hot days!  

Cranberries -  for urinary tract health,  for our cardiovascular system,   and for our pets!

Researchers believe that the flavenoid compound is responsible for reduction in cardiovascular disease.   Flavenoids  - inhibit blood clotting by increasing the interior blood vessel diameter  thus improving  blood flow and reduces blood pressure.  

Flavenoids in Cranberries also protect oxidation of cholesterol in the bloodstream  - and reduces the clogging of the arteries.    Research shows that the flavenoids  help our animals in the same way.    

I don’t think my dog or cats would drink cranberry juice   -   I don’t care for it myself.                            The remedy??

Cranberry Sorbet for your Health!

Hello again!      Hope you are enjoying this beautiful weather -  Winnipeg  Manitoba Canada  is alittle cooler today -  high of 22deg.C    (about 75 deg F )     

I found this delightful recipe for Cranberry Sorbet  in the   Alive  Natural Health Guide #10  (written by Phyllis Dales and Bruce Dales)        “It is a sweet and delicious way to seduce your guests with cranbereries”.  Sorbet is often  served between two courses to stimulate the appetite;  it also makes a wonderful dessert. 

Mix together:   1 cup (250ml)  fresh cranberry juice           1 /2 cup water   1 teaspoon  freshly squeezed lemon juice     1 teaspoon  lemon rind finely chopped    1 teaspoon fresh mint,. finely chopped    1 /4 cup (80g) natural cane crystals   1 /4 cup (80ml) honey    Beat 1 egg white until stiff and fold into mixture.   Pour mixture into ice cube trays.   Freeze for 4  to  5  hours, or until firm     Serves  2      

Just another idea for dessert that is easy to make and cool to eat.

Among the many health benefits of cranberries, it seems that prevention of many stomach ailments are at the forefront.  Besides urinary tract infections, ulcers, kidney stones, and bacteria related to some stomach cancers may be prevented or improved by ingestion of cranberries or cranberry products, which have proven to aid the body in fighting infection.  Cranberries are also thought to lower bad cholesterol.

Research is being conducted by the National Institutes of Health on the cranberry’s possible effects on heart disease and yeast infections, among other conditions.  Other researchers are looking into the possibility of using cranberry to fight cancer, stroke and viral infections.

Women develop UTIs more frequently than men.  There are steps you can take to prevent first time UTI occurrences, such as drinking plenty of water and cranberry products, whether in juice, capsule, dried or fresh form.

Cranberries - Urinary tract,ulcers,& more.

Hi there –   I’m back!!     I meant to do this blog yesterday then I heard I was having  company for a few days  -  I’ve been busier than a 3 arm paper hanger!Anyway   it is another perfect summer day here  -  hope they stay around for a while!    It is very windy - my laundry is out on the line dancing in the wind! 

I checked out “The Cranberry Institute”  in Wisconsin State  and found some really good information to hand on.    I quote “The Cranberry Institute is dedicated to supporting research and increase awareness abut the health benefits of the cranberry”     

 At an annual meeting and food expo, the cranberry took center stage!       The researchers discussed how the cranberries powerful bacteria blocking properties may help prevent urinary tract infections,  some stomach ulcers, and gum disease.   Plus  -  as a rich antioxidant they proposed how cranberries may help protect against heart disease and cancer!    That is wonderful news!

Sad to say but fresh cranberries are not always available on the store shelves.

Cranberry Products and Quality

Monday  August 18th    -  another beautiful summer - day.   I wish there was a way to “can” or “preserve”  a few of them for the long winter months -  wouldn’t that be great?  However,  can’t be done so we must appreciate them now  and I’ll get on with my Blog for today!    

It is generally believed that a good freeze dried product is the best way of retaining the therapeutic value of cranberries preserving the amino acids, enzymes, Vitamin C and various other nutriens.     Quality freeze drying also preserves the color and tasts, without subjecting them to heat or sweeteners.      When cranberries come in season -  I buy lots of them and freeze immediately.

Cranberry - Apple - Pear Juice

I hope you are having a wonderful day  -   it is a beautiful hot day in Winnipeg  Canada  -  a nice breeze so I have my laundry out on the line!  

I found this great recipe for fresh fruit juice  -  perfect for summer or anytime  -  hope you enjoy it!  

                            Cranberry - Apple -Pear   Juice

2 lbs (950g)  fresh cranberries      l large organic pear, cored     1 large organic apple, cored  (I’m sure that an ordinary pear and apple would do the same)     Pur cranberries, apple and pear through a juicer and mix the three juices.    Pour into a glass and add:  2 tsp lemon or lime juice       and   2 tablespoons honey.   Stir and garnish with  1 sprig fresh mint for garnish.             Serves  2  

It is difficult, if not impossible,  to find cranberries in the stores just now  -  some folk are fortunate they can go picking!      Just hang on to the recipe until the fresh cranberries are available, this juice is good anytime!      In the meantime -  don’t forget  -  cranberries are so very important in our daily intake of food   -   no fresh cranberries?          CranberryCrandale offer  100%  Fresh freeze dried cranberry capsules   year round!

Cranberries and Vitamin C

On checking ou information for today’s blog  I came across this great website  from www.honesinformation.com     and I am using their exact wording:

Recipe: Cranberry Fruit Mold

This is a great recipe for the hot days  when a jellied salad is always welcome!

                            Cranberry Fruit Mold 

Using a food chopper  -   1 1 /2 cups fresh  or frozen cranberries  

                                           1 orange - rind and pulp included     

                                           1 apple 

Add:   1 0r  2 stalks celery, chopped    and        1 /2 cup sugar  

Make jelly mold   - using 1 cup boiling water  and cool 

Add ingredients to cooled jelly mold and let set.

                (I like the idea that so little sugar is needed)
