Good evening! Thursday already - where does the week go to? Yesterday I was at the church with my group of ladies making mincemeat for our bazaar in November. Next Wednesday we are making apple pies and mincemeat tarts - on assembly line!
Our weather has been just great - we hit a high of 17C today - a good wind - I use these days to do any extra laundry or get the blankets out to blow. I hated to do it - but I covered up my rose bushes for the winter as it is supposed to get on the cool side again. Brought all my geraniums in and sit on the window sill! My cat has to share the space now!
I promised to give my readers a recipe sometimes and this one caught my eye (and my tastebuds) It is called Spelt Spaghetti with Cranberries
1 cup fresh cranberries 3 cloves garlic, minced 1 medium onion chopped onion 1 /4 cup organic vegetable broth 2 cups Portobello sliced mushrooms 1 /2 cup green onions chopped 1 /2 cup walnuts - halved 1 tbsp chopped dill 1 tbsp natural organic butter 250g spelt spaghetti - cooked al dente (Italian and means cooked but still firm to the bite. 3 tbsp extra virgin olive oil sea salt and pepper or Herbamare to taste
Saute garlic and onion in olive oil until translucent, add mushrooms and saute for another two minutes. Add cranberries, vegetable broth and all other ingredients. Mix well and add cooked pasta. Toss very well. Serves 2
To clean the mushrooms use a dry kitchen cloth or pastry brush, or carefully peel the skin off. Do not wash them - as they absorb the water and dirt and the water also encourages them to oxidize and turn brown. (we were actually talking about this in our group a few days ago - to wash or not wash - and now I know!)
